Caramelized Onions with Kale

This is one of my favorite recipes ever! I discovered it when I was just beginning my health journey and making major diet changes. I fell in love with this recipe! Serve as a side or over rice. It is wonderful for your digestion and immunity!

Caramelized Onions with Kale


  • 1 Small Onion
  • 3 Cloves Garlic
  • 1 Bunch Kale
  • 2-4 Tablespoons Olive Oil, Avocado Oil or Organic Butter
  • Himalayan Pink Salt


  1. Add oil to pan on low heat.
  2. Chop onion and add to pan. Cook until caramelized. Around 5-7 minutes
  3. Add garlic halfway through onion cooking time.
  4. Add kale and sprinkle with salt. Cover the pan and give the kale time to soften. It will take just a few minutes.

Recipe update: Mushrooms added to this dish are delicious, not to mention extra health benefits 😉
